Watercress Mayonnaise
4 egg yolks
2 tsp salt
1/8 tsp Tabasco sauce
1.2 tsp paprika
1/2 tsp dry mustard
3 tbs cold water
4 cups salad oil
juice of 3 lemons
2 cups finely chopped water cress

Beat egg yolks with an electric mixer for 4 minutes until light and lemon colored. Add salt, Tabasco, paprika, dry mustard and cold water. Add oil slowly, beating constantly at medium speed. Add lemon juice. Add watercress and continue to beat until well blended.
Wonderful served over fish or with cold or steamed vegetables.
Makes 5 cups.
