    Default Perky Pasta Salads

    Antipasto Pasta Salad



    Prep Time:15 min

    Start to Finish:25 min

    Makes:6 servings (1 1/2 cups each)



    1 box Suddenly Salad Caesar pasta salad mix

    1/2 cup Italian dressing

    4 cups torn romaine lettuce

    1 cup cubed salami

    1 cup cherry tomatoes, halved

    4 oz mozzarella or provolone cheese, cut into 1/2-inch cubes (1 cup)

    1 can (2 1/4 oz) sliced ripe olives, drained



    1. Empty pasta mix into 3-quart saucepan 2/3 full of boiling water.

    Gently boil uncovered 12 minutes, stirring occasionally.

    2. Drain pasta; rinse with cold water. Shake to drain well.

    3. In large bowl, stir together seasoning mix and dressing. Toss with

    pasta and remaining ingredients. Stir in croutons and Parmesan

    topping just before serving. Serve immediately, or refrigerate.

    Race-Day Three-Bean Pasta Salad



    Prep Time:10 min

    Start to Finish:25 min

    Makes:10 servings (1 cup)



    1 box Suddenly Salad classic pasta salad mix

    3/4 cup sweet-spicy French dressing

    1/4 to 1/2 teaspoon red pepper sauce, if desired

    2 medium tomatoes, coarsely chopped (1 1/2 cups)

    1 medium green bell pepper, chopped (1 cup)

    1/2 cup chopped red onion

    1 can (19 oz) cannellini beans, drained, rinsed

    1 can (15 oz) kidney beans, drained, rinsed

    1 can (15 oz) chick peas (garbanzo beans), drained, rinsed



    1. Empty pasta mix into 3-quart saucepan 2/3 full of boiling water.

    Gently boil uncovered 12 minutes, stirring occasionally.

    2. Drain pasta; rinse with cold water. Shake to drain well.

    3. In large bowl, stir together seasoning mix, dressing and pepper

    sauce. Stir in pasta and remaining ingredients. Serve immediately, or

    refrigerate.

    Fiesta Chicken Pasta Salad



    Prep Time:10 min

    Start to Finish:25 min

    Makes:4 servings



    1 package Suddenly Salad classic pasta salad mix

    1/3 cup sour cream

    3 tablespoons water

    1/2 teaspoon chili powder

    1 cup cherry tomato halves

    1/2 cup julienne strips green bell pepper

    2 green onions, chopped

    1 cup cubed cooked chicken or roast beef

    Tortilla chips

    1/2 cup shredded Cheddar cheese (2 ounces)

    salsa (any variety)



    1. Fill 3-quart saucepan 2/3 full of water. Heat to boiling. Add

    contents of Pasta-Vegetable pouch to boiling water. Gently boil about

    12 minutes or until pasta is tender; drain. Rinse with cold water

    until chilled; drain.

    2. Stir together Seasoning mix, sour cream, water and chili powder in

    large bowl. Stir in pasta-vegetable mixture, tomatoes, bell pepper,

    onion and Parmesan Topping. Stir in chicken.

    3. Line serving plate with tortilla chips. Mound salad onto chips;

    sprinkle with Cheddar cheese. Serve with salsa. Refrigerate any

    remaining salad.

    Zesty Potluck Pasta Salad



    Prep Time:15 min

    Start to Finish:20 min

    Makes:14 servings (1 cup each)



    2 boxes Suddenly Salad classic pasta salad mix

    3 cups frozen broccoli florets

    2/3 cup Italian dressing

    1/3 cup cold water

    2 cups cut-up cooked chicken or ham

    1 1/2 cups halved grape tomatoes



    1. Empty contents of both pasta mix pouches into 4-quart saucepan 2/3

    full of boiling water. Gently boil uncovered 12 minutes, stirring

    occasionally and adding broccoli during last 2 minutes of cooking.

    2. Meanwhile, in large bowl, stir contents of both seasoning mix

    pouches, the dressing and cold water; set aside.

    3. Drain pasta with broccoli; rinse with cold water. Shake to drain

    well. Stir pasta with broccoli, chicken and tomatoes into dressing

    mixture. Serve immediately, or refrigerate.

    Brownie 'n Berries Dessert Pizza



    Prep Time:20 min

    Start to Finish:2 hr 50 min

    Makes:16 servings



    1 box (1 lb 6.5 oz) brownie mix

    Water, vegetable oil and eggs called for on brownie mix box

    1 package (8 oz) cream cheese, softened

    1/3 cup sugar

    1/2 teaspoon vanilla

    2 cups sliced fresh strawberries

    1 cup fresh blueberries

    1 cup fresh raspberries

    1/2 cup apple jelly



    1. Heat oven to 350F (or 325F for dark or nonstick pan). Grease

    bottom only of 12-inch pizza pan with cooking spray or shortening.

    2. In medium bowl, stir brownie mix, pouch of chocolate syrup, water,

    oil and eggs until well blended. Spread in pan.

    3. Bake 28 to 30 minutes or until toothpick inserted 2 inches from

    side of pan comes out clean or almost clean. Cool completely, about 1

    hour.

    4. In small bowl, beat cream cheese, sugar and vanilla with electric

    mixer on medium speed until smooth. Spread mixture evenly over

    brownie base. Arrange berries over cream cheese mixture. Stir jelly

    until smooth; brush over berries. Refrigerate about 1 hour or until

    chilled. Cut into wedges. Store covered in refrigerator.

    Default Perky Pasta Salads

    Love these recipes. I do find the prepackaged pasta salads more expensive than

    a regular box of pasta and adding my own italian/mexican seasoning to the

    recipe.

    Also check to see if your deli sells ends of the product. I use ham ends for

    mac&chse, salami for pasta salads, chik & turkey for mini pot pie...cheese ends

    for english muffin or bagel pizzas. Possibilities are endless. Ask your deli

    friend.
