    After I slice my potatoes, I soak them in cold water and ice with about 1-2 tsp white vinegar.
    When I'm ready to cook, I rinse and drain them well, pat dry, then season. Spray a baking pan with Pam then add the DRY seasoned potatoes. Drizzle with a little olive oil and toss to coat. In a preheated oven, roast the potatoes at 400-425 until they're crispy and browned on the outside.
    (Or at least this is what I do with mine, and they usually turn out pretty tasty.)

    Thank you.. I never soaked mine, think thats where i might have been going wrong.

    I read somewhere that the vinegar removes some of the starch or something along those lines...makes the potatoes a little more crispy on the outside when cooked.

    I worked with a lady made potatoes with a pot roast and hers came out looking like they were cut in half and broiled. they were brown, crispy and really good. I never did figure out how she did that.

    ps...I am jealous you have your menu planned out the whole week. I have never been that organized. I mainly do day by day and what is in the freezer.

    Actually...I am so NOT organized. lol I menu plan to keep me going. If I wait until later on in the day to figure out what's for dinner, well...I won't be cooking that night. We'll end up with take out or going out.
    I've got several good friends that do the same thing you do. So does my MIL. It works for them very well. For me...not so much. The stress alone would drive me around the bend.
