GARLIC-PARMESAN SMASHED POTATOES<SPAN class="546093513-17062008">- These are so Dat gum yummy!!


4 cloves garlic, halved


1 tablespoon olive oil


2-1/2 lbs. red potatoes, quartered


1/4 cup butter, cut into pieces


3/4 cup freshly grated Parmesan cheese


1/2 tsp. salt


1/2 tsp. pepper


1/2 cup hot milk


Sauté garlic cloves in hot oil in a large saucepan over medium heat


until golden.


Add potatoes and water to cover. Bring to a boil; cover, reduce heat,


and simmer 15 minutes or until potato is tender. Drain, discarding


garlic. Add butter and next 3 ingredients to potatoes.


Beat at medium speed of an electric mixer until fluffy, gradually adding



milk. (Do not overbeat.) Add additional milk, if desired, for creamier


potatoes.


Makes 4 to 6 servings.
