    Default MYO: Vanilla Wafers

    Vanilla Wafers

1/2 cup butter, softened (no substitute)

    1 egg

    1-1/3 cup flour

    1/4 tsp. salt

    1 cup sugar

    1 Tbsp. vanilla

    3/4 tsp. baking powder

In a mixing bowl, cream butter and sugar. Beat in egg and vanilla. Combine dry ingredients; add to creamed mixture and mix well. Drop by teaspoonfuls 2 inches apart onto ungreased (or parchment paper lined) cookie sheets. bake at 350 for 10-12 minutes or until edges are golden brown. (I baked mine at 325 for about 10 minutes). Remove to a wire rack to cool.

    YIELD: about 3 dozen cookies.

    Recipe from Gerry Costello

NOTE: I baked these at 325 for 12 minutes.

Thank you for posting this recipe. Vanilla wafers are used in bourbon balls or in rum balls. =D>
