Layered Mexican Party Salad

Makes:12 servings (1 cup each)



1 box Betty Crocker Suddenly Salad classic pasta salad mix

3 tablespoons water

2 tablespoons vegetable oil

1 teaspoon ground cumin

1 can (15 oz) black beans, drained, rinsed

1 can (15.25 oz) whole kernel corn, drained

4 cups torn romaine lettuce

1 container (12 oz) refrigerated guacamole dip

1 1/2 cups finely shredded Mexican 4-cheese blend (6 oz)

3 plum (Roma) tomatoes, chopped

1 can (2 1/4 oz) sliced ripe olives, drained

3 cups nacho-flavored tortilla chips





1. Empty pasta mix into 3-quart saucepan 2/3 full of boiling water.

Gently boil uncovered 12 minutes, stirring occasionally.

2. Drain pasta; rinse with cold water. Shake to drain well. In medium

bowl, stir together seasoning mix, water, oil and cumin. Stir in

pasta, beans and corn.

3. In 4-quart glass salad bowl or 13x9-inch glass baking dish, layer

lettuce and pasta mixture. Spread guacamole evenly over top. Sprinkle

with cheese and tomatoes; top with olives.

4. Just before serving, arrange chips around edge of bowl. Serve

immediately, or refrigerate.

Grilled Cheese-Stuffed Turkey Burgers

Makes:12 burgers



3 lb ground turkey breast

1 or 2 jalapeño chiles, seeded, chopped

1 cup diced Monterey Jack cheese with jalapeño chile peppers

3/4 teaspoon pepper

1 1/2 cups Thick 'n Chunky salsa

12 hamburger buns, split, toasted

12 slices tomato

Additional Thick 'n Chunky salsa, if desired



1. Heat gas or charcoal grill. In large bowl, mix turkey, chiles,

cheese, pepper and 1 1/2 cups salsa. Shape mixture into 12 patties,

each about 3/4 inch thick.

2. Place patties on grill. Cover grill; cook over medium heat 12 to

15 minutes, turning once, until thermometer inserted in center of

patties reads 165°F.

3. Serve burgers on buns with tomato slices and additional salsa.

Grilled Backyard Beer Burgers



Prep Time:10 min

Start to Finish:25 min

Makes:6 servings



1 1/2 lb lean (at least 80%) ground beef

1 small onion, finely chopped (1/4 cup)

1/4 cup regular or nonalcoholic beer

1 tablespoon Worcestershire sauce

1 teaspoon salt

1/4 teaspoon pepper

2 cloves garlic, finely chopped

6 rye or whole wheat hamburger buns, split

Ketchup, if desired

Pickle planks, if desired



1. Heat gas or charcoal grill. In medium bowl, mix all ingredients

except buns, ketchup and pickles. Shape mixture into 6 patties, about

3/4 inch thick.

2. Place patties on grill rack over medium heat. Cover grill; cook 10

to 15 minutes, turning once, until meat thermometer inserted in

center of patties reads 160ºF. Add buns, cut sides down, for last 4

minutes of grilling or until toasted.

3. Top burgers with ketchup and pickle planks; serve on buns.

Grilled Dijon and Wild Rice Turkey Burgers

Makes:6 sandwiches



Dilled Dijon Sauce

1/3 cup mayonnaise or salad dressing

1 teaspoon chopped fresh or 1/4 teaspoon dried dill weed

1 teaspoon Dijon mustard



Burgers

1 pound ground turkey or beef

4 medium green onions, chopped (1/4 cup)

1 cup cooked wild rice

1 tablespoon chopped fresh or 1 teaspoon dried dill weed

2 tablespoons Dijon mustard

6 French rolls, split



1. Heat coals or gas grill for direct heat. In small bowl, mix all

sauce ingredients. Cover and refrigerate until serving.

2. In large bowl, mix all burger ingredients except rolls. Shape

mixture into 6 oval patties, about 3/4 inch thick.

3. Grill patties uncovered over medium heat 12 to 15 minutes, turning

once, until no longer pink in center and thermometer inserted in

center reads 165°F. Add rolls, cut sides down, for last 4 minutes of

grilling until toasted.

4. Serve burgers on rolls. Top with sauce.

Grilled Barbecued Beef and Bean Burgers

Makes:5 servings



1/2 lb extra-lean (at least 90%) ground beef

1 can (15 to 16 oz) great northern beans, drained, rinsed

1/4 cup finely crushed saltine crackers (about 7 squares)

2 tablespoons barbecue sauce

1/4 teaspoon pepper

1 egg

Leaf lettuce, if desired

5 whole-grain hamburger buns, split

5 teaspoons barbecue sauce

Sliced tomato and sliced onion, if desired



1. Heat gas or charcoal grill. In large bowl, mix beef, beans,

cracker crumbs, 2 tablespoons barbecue sauce, the pepper and egg.

Shape into 5 patties, about 1/2 inch thick.

2. Brush grill rack with vegetable oil. Place patties on grill. Cover

grill; cook over medium heat 5 minutes. Turn; cook covered 5 to 6

minutes longer or until meat thermometer inserted in center of

patties reads 160ºF.

3. Place lettuce and patties on bottom halves of buns. Spread each

patty with 1 teaspoon barbecue sauce. Top with tomato and onion.

Cover with bun tops.

Broiling Directions: Place patties on broiler pan. Broil with tops 4

to 5 inches from heat using times in recipe as a guide, turning once

and spreading with barbecue sauce after turning.



Mixing ground beef with beans is a great way to enjoy the taste of

beef and boost your fiber.



Try using other kinds of beans, such as black, kidney or pinto,

instead of the great northern beans.
