    Default Quick, Easy & Healthy Meal Ideas Needed

    Hi all! I am looking for ideas for super-fast, easy and HEALTHY meal

    ideas for those days when dinner absolutely needs to be on the table

    in less than 30 minutes. A lot of what I find out there are not quick

    (too much prep work) or not healthy.



    I'll share mine and hopefully you can share yours. Thanks!



    Salsa Chicken



    5 or 6 Chicken Thighs (breast work too)

    1 pkg taco seasoning

    1 cup salsa (or to taste)



    minute brown rice (in quantities for your family)

    1 can red beans

    chicken broth (enough to cook rice in)

    cajun seasonings

    (NOTE: Zatarans Red Beans & Rice can be substituted for beans and

    rice - we keep a pack of the 60 second version on hand for super-

    hurried nights)



    Start preparing rice according to package directions, substituting

    chicken broth for water and adding cajun seasonings to water. Stir in

    drained canned beans when you add rice.



    Preheat oven to 350 degrees. Sprinkle chicken with taco seasonings

    and arrange in sprayed casserole dish. Top with salsa and bake for 30-

    35 minutes until no longer pink.




    Serve on rice.



    Optional: a dallop of light sour cream and/or a sprinkle of 2%

    shredded cheese. I serve with corn and sometimes we wrap in a

    tortilla.

    <SPAN style="FONT-SIZE: 10pt;COLOR: teal;FONT-FAMILY: 'Comic Sans MS';">I got this from the More with Less (Mennonite) cookbook. It isn't hard and doesn't have a lot of ingredients.

    5-6 small – med potatoes - peeled and diced to about 1/2 an inch square (small dice)
    1/2 stick of butter
    S&P
    1/2 c milk (I used FF 1/2 and 1/2 ) *** not in the recipe - I added the milk
    1/4 cup flour
    ~~Optional - for garnish~~
    Shredded Cheddar cheese
    Real bacon bits
    Chopped green onions
    Sour cream
    Put the potatoes in a pot and boil them for about 30 mins. Then while these are cooking, using about 2 tbsp of butter, <SPAN>chop up an onion and cook until tender (or can add to the cooking potatoes and not sauté them). Add the rest of the 1/2 a stick of butter to the cooked onions and/or the flour. Cook until it is a golden color (the flour has browned a bit). Add the milk, then add that mixture to the cooked potatoes and the S&P - don't drain the water. Cook for a few minutes until it has thickened. (if not thick enough, put a heaping tbsp of flour in a small container, add some water and shake until well mixed. Dump into the soup pot and whisk like a daemon until it has thickened).

    Serve with a dollop of sour cream and a bit of cheese. I also put the green onions on mine as well as the bacos, too.

    Hi Monica,



    You've just hit on my favorites. Quick, easy and nutritous.



    Does your family like stir fry? You can use practically anything you

    want in them. We each make ours separately (in the same pan, of

    course, in turns). We got this idea from a restaurant we like to go

    to. This way everyone is involved and the wait doesn't seem so

    long. For shortcuts you can use left-over meat or tofu (that's mine)

    and get your veggies from the grocery salad bar. It's more expensive

    that way, but a lot cheaper and better for you than fast food or

    Chinese take-out. We use whatever sauce, even BBQ, that we happen to

    have. This even suits our teen.



    How about Pininies(sp) Use left over meat or a bit of deli meat,

    cheese top with saute'd (sp) peppers and onions and toast. We like

    ours grilled in the Foreman.



    Crock pot meals are great for those hurried evenings. 10 -15 minutes

    in the morning and dinner is ready!!



    Some other quick things: taco salad, bean buritos, any kind of wrap,



    Your chicken sounds delicious. That's more meat than we normally

    eat, but it looks like something my family would really like.



    Hope you get a lot of responses to your post. I could use some more

    ideas as well.
