MYO: Mock Eggnog
2 quarts cold milk... I USE POWDERED SKIM...MADE UP
1 pkg. Instant French vanilla or vanilla pudding (3.4 oz).. I USE SUGAR FREE
? cup sugar.. OR TO TASTE....... I USE SPLENDA....
1 t. ground nutmeg
1 t. vanilla extract
1/8 t. salt, optional
1 cup heavy whipping cream.... I USE FAT FREE 1/2 AND 12 IT DOES NOT WHIP SO I JUST STIR IT WELL.......
Additional nutmeg, optional
In a mixing bowl, beat milk and pudding mix on low speed for 2 minutes. Beat
in the sugar, nutmeg, vanilla and salt, if desired. In another mixing bowl,
beat cream until thickened, about 3 minutes. Stir into pudding mixture.
Refrigerate until serving. Sprinkle with additional nutmeg if desired. Makes
about 2 ? quarts.
