using leftover Blackeyed peas- Left Over Layering

I made a simple skillet dinner with leftover Blackeyed peas and it was a hit! Hearty Blackeyed peas: 1/2 pound bulk pork sausage, browned. 2 cups blackeyed peas (can use canned, if so, rinse and drain) 1 can diced tomatoes, undrained 1/4 cup finely chopped onion 1/2 cup finely chopped

    Talking using leftover Blackeyed peas

    I made a simple skillet dinner with leftover Blackeyed peas and it was a hit!

    Hearty Blackeyed peas:

    1/2 pound bulk pork sausage, browned.
    2 cups blackeyed peas (can use canned, if so, rinse and drain)
    1 can diced tomatoes, undrained
    1/4 cup finely chopped onion
    1/2 cup finely chopped green peppers
    2 cloves garlic, pressed
    1/2 tsp dried oregano
    1/2 tsp dried rosemary
    salt and pepper to taste

    1 cup cheddar cheese

    Brown onion, garlic and peppers with sausage. Add all other ingredients, except cheese and bring to a boil. Lower to a simmer, cover, and cook for 15 minutes. Sprinkle with cheese and cover to melt.

    My daughter and nephews gobbled this dish last night!!
