Tangy Peas and Carrots
1 lb pkg frozen peas and carrots (or 2 cups leftovers)
4 slices bacon (if you prefer turkey bacon, fry in 1 tsp olive oil)
1/4 cup onion, chopped (dehydrated works in a pinch...just add a bit of water)
1 1/4 cup white vinegar
2 tbs sugar
1 tsp salt
1/2 tsp pepper

In a large skillet, fry bacon until crisp. Remove bacon, cool and crumble (or chop if using turkey...it doesn't crumble so well). Add remaining ingredients to the skillet and cook over medium heat for 10 minutes, stirring often. Stir in bacon. Serve immediately.

Note: I prepare this with regular bacon and turkey. There's not much difference in taste, but if you are watching your fat consumption go with the turkey. I just use whatever is on sale when I prepare this side dish...giggle...
