Breakfast: Oatmeal with walnuts, raisins and a touch of maple syrup

Lunch: Fried Chicken (A friend of my husbands, gave him a small bag of fried chicken last night. So fried chicken…it’s what’s for lunch)

Supper: Potpie (Every two weeks I purchase a large box of fruits and vegetables from Bountiful Baskets (Bountiful Baskets) This is a real treat for us here, because “fresh” fruit and vegetables is a relative term here in the high Rockies. The baskets come in every two weeks and today is my regions day to pick them up. So whatever vegetables are in the basket this time around, will find their little vitamin packed lives in my chicken potpie, made with left over herb roasted chicken. Yum!

FYI - by this time next week, I am going to be so sick of chicken
