Diabetic Coconut Raisin Bars
2 large eggs, slightly beaten
1 cup Splenda*
6 tablespoons melted low fat butter
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup toasted flaked coconut
1/2 cup chopped walnuts
1/2 cup seedless raisins
In a jar add the following ingredients in this order?
Mix together the following in a bowl?
Flour, salt, baking powder and splenda. Blend well and pour on top
of other ingredients in the jar.
Screw lid on jar and decorate.
Add the following tag?
Beat 2 eggs in medium bowl. Add 6 tablespoons melted low fat butter,
& 1 teaspoon vanilla extract to beaten eggs and mix. Stir in
contents of jar and mix well. Spread batter in lightly sprayed 8-
inch square pan.
Bake in preheated 350?F oven 18 to 20 minutes or until wooden pick
inserted in center comes out clean and top is golden. Cool
completely on wire rack. Cut into bars.
Store in airtight containers at room temperature.
Makes 16 bars.
* May substitute 24 splenda packets.

I agree. this sound really good. I will try this but minus the walnut. As a kid my grandmother always had a big bowl of walnuts on the table and my cousins and I would eat them like crazy. Great memories :smt060 but I dont think my teeth can handle walnuts now :smt022 :smt043
