    Sure! I also just posted this in the recipe sections also.

    Sunrise Muffins
    Yield: about 12 muffins

    2 cups AP flour-divided
    1 cup quick cooking oats
    1 1/2 tsp baking powder
    1 tsp cinnamon
    pinch allspice
    3/4 tsp baking soda
    1/4 tsp salt
    1 1/4 cup Splenda brown sugar blend-divided
    1/2 cup butter-divided
    1 egg
    1 1/4 cups milk
    1/2 cup light raisins
    1/2 cup *Sunrise Marmalade*
    1 cup finely chopped walnuts *optional*

    1. Combine 1 1/2 cups flour, oats, baking powder, cinnamon, allspice, baking soda, and salt in a medium bowl; set aside. Soften 1/4 cup butter.
    2. Combine softened butter, 1/2 cup brown sugar, and egg; mix well. Add flour mixture and milk to sugar mix. Stir well.
    3. Add raisins. Fold in gently.
    4. Fill greased muffin cups 1/2 full with batter. Spoon 1-1 1/2 tsp marmalade into center of each muffin. Carefully spoon batter over marmalade to cover; set aside.
    5. Combine 1/2 cup flour, walnuts-if using, and 1/2 cup brown sugar blend in a small bowl. Cut 1/4 cup butter into dry ingredients with a pasty blender just until mix is uniformly coarse. Sprinkle topping over muffins.
    6. Bake at 375 for 25 minutes or until muffins test done. Cook 5 minutes then remove from pan and cool on a wire cooling rack.

    Delicious as snacks, desserts, or for breakfast.
    These muffins freeze well also. Just make sure to wrap them securely, then place in a zip top freezer bag. Label and freeze.

    *Sunrise Marmalade
    Yield: approx 4 half pints

    2 lemons, peeling and 1/3 cup juice
    2 cups chopped orange pulp-Can use some of the zest
    1 cup crushed fresh pineapple-drained
    1 cup shredded carrots
    1 1/2 cups Splenda
    1/2 tsp butter
    1/4 tsp allspice *Optional*
    1/4 tsp nutmeg
    1 box no/low sugar Sure Jell

    1. Peel lemons, avoiding the pith. Slice peel into thin strips; set aside. Juice the lemons and measure out 1/3 cup. Combine lemon peel and juice.
    2. Peel oranges and chop pulp. Shred carrots. Prep Pineapple and crush.
    3. Combine lemon mix, oranges, carrots, and pineapple into a large saucepan. Add splenda, allspice, nutmeg, and butter. Bring to a boil.
    4. Briefly remove from heat. Add pectin with a whisk and mix well. Return to heat and bring to a hard rolling boil for 1 minute; stirring constantly. Remove from heat.
    5. Gently stir for 2 minutes then ladle into hot prepared half pint jars; leaving 1/4 inch head space. Adjust 2 lids and bands. Tighten to fingertip tightness.
    6. Process in boiling water bath 10 minutes, then remove to counter. Listen for the "pings" to indicate the jars sealing.

    Okay, so Hubby decided my week's not been chaotic enough...He apparently thought he needed to help with that. :/ Friday instead of the left overs, he decided he wanted the chicken that was for today...Well, alrighty then. So we had chicken Friday.
    Today rolls around, and for lunch and snack..and snack...and well, another snack, he's ate the left overs. Well...now what? So his solution, since I work so much during the week-his words, he'll take us out. Huh? I thought the purpose of doing a weekly menu was to avoid this type situation.
    Truth be known, Hubby was wanting to eat seafood and used that as an excuse. Now lets see if we can re do our ENTIRE budget...Can you guess who has to do that trick??
    I do love that man, but he can drive me around the bend sometimes.
