I really like your menu. And have a happy birthday! Curry chicken is my dh's favorite meal. I make mine in the crockpot and when I have habenero peppers I add one or two. Don't add 4 like I did one time.
It was too spicy.

Re: Vampixen's Dinner Menu 9/2 - 9/8
I LOVE white beans and cornbread!! Hubby usually wants fried potatoes with his also.
I've not used bacon in my beans, but my SIL does. She swears by it.
I always save and freeze our ham bones or the ham hock off a cooked ham. When I'm ready to serve beans, (white, pinto, cranberry, etc...), I'll soak them overnight like vampixen does.
The next day I drain and rinse the beans REALLY WELL. That saves me from adding either a carrot or potato to help with the intestinal discomfort.
I add the drained and rinsed beans, water to cover by about an inch, a couple diced onions, and the ham bone or ham hock. Then cook on low all day. When almost done, season to taste.
See how similar our recipes are...it must be a Southern thing. lol
