4-5 medium russet potatoes-diced
1 lb roll sausage (can use bacon or what's on hand)
1 onion-diced
2 cloves garlic-minced/grated
s and p-to taste
4 eggs
1/2 cup sliced fresh mushrooms (can use canned-drain well)
shredded cheese (optional)

1. In a heavy bottomed skillet, fry sausage until done. Remove the sausage and place on a paper towel to absorb excess grease. Drain and reserve the fat. Scramble meat into tiny pieces.
2. Add 2 tbsp fat back to skillet. Add potatoes and onions. Cook for 5 minutes then add the mushrooms and garlic.
3. Add the cooked sausage to the mixture and cook together for 5 more minutes.

4. Remove mixture from skillet. Add cheese to top of hash-if using. Wipe out skillet. Add 1 more tbsp fat. Add eggs and fry. Flip and cook to desired doneness.
5. Add eggs to top of hash.
Serves 4

Makes a great breakfast or dinner.
