3 large tomatoes-peeled and diced
1/2 cup white onion-finely diced
1 clove fresh garlic-minced or grated
1/2 jalapeno pepper-diced
1 Anaheim pepper-seeded and diced
1/2 sweet red pepper-diced
2 tbsp cilantro-chopped
1/4 tsp salt
Juice from 1/2 fresh lime
1 tsp white wine vinegar
1 tbsp low sodium tomato juice or low sodium V-8 juice

1. Place tomatoes in a colander to reduce the tomato liquid while you prepare the rest of the ingredients. Place a bowl under it if you want to collect and use the tomato juice.
2. Put all ingredients in a glass, ceramic or stainless steel bowl. Mix well; let stand for at least 30 minutes.
3. Serve salsa with baked tortillas, meats, black beans, or other main dishes.
