Double Cranberry Muffins

CRANBERRY ALMOND CRUNCH Cereal, divided 3/4 cup fat-free milk 1 egg

1 tsp. grated orange peel 1/3 cup orange juice 2 Tbsp. plus 1 tsp.

oil, divided 1 cup fresh or frozen cranberries, coarsely chopped

PREHEAT oven to 375F. Combine flour, 1 cup sugar and baking powder

in large bowl. Mix 1 cup cereal and milk in medium bowl; let stand 3

min. Add egg, orange peel, orange juice and 2 Tbsp. oil; mix well.

Add to flour mixture; stir just until moistened. (Batter will be

lumpy.) Gently stir in cranberries.



CRUSH remaining 1 cup cereal; mix with remaining 1 Tbsp. sugar and 1

tsp. oil. Spoon batter evenly into 16 paper-lined medium muffin cups.

Top with cereal mixture.



BAKE 22 min. or until muffins are golden brown and toothpick inserted

in centers comes out clean. Cool in pan 5 min.; remove to wire rack.

Serve warm or cooled.

Easy Cheesy Frittata

6 servings, one slice each4 eggs 4 egg whites 2 Tbsp. water 1/2

cup chopped seeded tomatoes 1 cup KRAFT 2% Milk Shredded Reduced Fat

Mozzarella Cheese, divided 2 slices OSCAR MAYER Bacon, crisply

cooked, crumbled 1/4 cup chopped fresh basil PREHEAT oven to 350F.

Beat eggs, egg whites and water in medium bowl with wire whisk until

well blended.



STIR in tomatoes, 1/2 cup of the cheese, the bacon and basil. Pour

into greased 9-inch pie plate.



BAKE 25 min. or until puffed and golden brown. Sprinkle with

remaining 1/2 cup cheese. Bake an additional 5 min. or until cheese

is melted.

Citrus Salad with In-Season Greens

Italian Dressing 4 cups loosely packed curly endive leaves 2 cups

loosely packed watercress leaves 3/4 cup thinly sliced red onions

PEEL fruit; cut into sections, allowing the juices to collect in

small bowl. Add dressing to reserved juices; mix well.



TOSS endive with watercress and onions in large bowl.



ADD dressing mixture; mix lightly. Top with fruit. Serve immediately.

Mock Mimosa

Low Calorie Soft Drink Mix 1 bottle (2 liter) club soda, chilled 2

cups cold orange juice 1 seedless orange, cut into 10 thin slices

EMPTY contents of drink mix tub into large plastic or glass pitcher.

Add club soda; stir until drink mix is completely dissolved.



STIR in orange juice.



SERVE over ice cubes in 10 tall glasses. Add orange slice to each

glass.
