1 cup AP flour
1/3 cup packed brown sugar
2 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 cup (1 medium) peeled, finely chopped apple
3/4 cup water
1/2 cup dry milk
1/4 cup vegetable oil or melted butter
1 large egg
2 cups bran flake cereal

1. Preheat oven to 400. Grease or line 12 muffin cups.
2. Combine flour, sugar, baking powder, salt, cinnamon, and nutmeg in medium bowl. Mix apple, water, dry milk, oil, and egg in small bowl. Add to flour mixture; stir just until moistened. Stir in cereal. Spoon into prepared muffin cups, filling only 2/3 full.
3. Bake for 12-15 minutes or until wooden pick inserted in center comes out clean. Remove to wire rack; cool slightly. Serve warm.

*Can freeze muffins.

*Can substitute Raisin Bran cereal for regular bran cereal.
*Can add 1-2 tbsp vanilla yogurt to apple mix.
*Can use buttermilk, sour cream or a mixture of either/both instead of water.
