Did you roast a chicken on Sunday? Well, save the leftovers to make a 'different' version of my recipe that I posted three years ago;-D
Chicken Tostadas
4 6-inch flour tortillas
1/4 cup oil
2 cups chopped, cubed, or shredded chicken
16-oz can vegetarian refried beans
1 cup torn lettuce
1 cup chunky salsa
2 tomatoes, seeded and chopped
1 avocado, peeled and chopped
1 tbs lemon juice

2 cups shredded Cojack cheese
1/2 cup sour cream, if desired
Heat chicken and refried beans in a saucepan, stirring frequently. Toss chopped avocados with lemon juice in small bowl.
Heat oil in heavy skillet over medium-high heat until a drop of water sizzles and pops. Fry flour tortillas, one at a time, about one minute on each side until crisp. Drain on paper towels. Assemble tostadas as desired, first spreading with chicken and refried beans, then layering on lettuce, salsa, tomatoes, avocado, and cheese.
