South Beach Diet-Phase 1
Vegetable Chili

1 tbsp evoo
2 bell peppers-chopped
1 1/2 cups chopped mushrooms
1 large onion-chopped
2 celery stalks-chopped
3 garlic cloves-minced
1 tbsp chili powder
1 tbsp dried oregano
1 tsp ground cumin
s and p-to taste
1 (14.5 oz) can diced tomatoes-undrained

2 (15 oz) cans pinto beans-undrained *(I drained and rinsed mine due to the sodium content-recipe turned out great)

1. In a large sauce pan, cook veggies and garlic in evoo about 7 minutes.
2. Add seasoning; cook 5 more minutes.
3. Add beans and tomatoes. Bring to a simmer and cook 25-30 minutes.
