South Beach Diet - Phase 1
Chunky Vegetable Hash

1 tbsp evoo
1 small onion-chopped
pinch each dried thyme and paprika
s and p-to taste
1 small bell pepper-diced
4 large mushrooms-rough chopped
2 small zucchini-diced
1 clove garlic-minced

1. In a large skillet, heat oil over med high heat.
2. Add onion, thyme, paprika. Reduce heat to med low. Cook for 7 minutes.

3. Stir in s and p, bell pepper, mushrooms, zucchini, and garlic.
4. Cover and cook 4 minutes longer.
5. Remove from heat and serve by itself or with a poached egg.

**Can also be used as an omlet filling or fritatta topping.
