    Default Quickie Breakfast- Omelet in a Mug

    Omelet in a Mug
    Serve: 1 serving
    Prep. time: 5-10 minutes
    Difficulty: Easy
    Ingredients:
    2 egg, beaten
    2-3 TBSP shredded cheddar cheese
    1 TBSP diced cooked ham
    1 TBSP diced green pepper
    salt and pepper to taste
    Cooking Instructions:
    Combine all ingredients in a small bowl; mix well. Spray a microwave-saft mug with cooking spray. Pour in egg mixture. Microwave, uncovered, on HIGH for 1 minute; stir. Cook 1 to 1-1/2 minutes longer or until eggs are completely set.

    This is also a high protein breakfast and more vegetables can be substituted for the ham to make it a vegetarian meal.
