Maui Crock Pot Chicken

4 boneless skinless chicken breasts
2 tbsp oil
1 (14 1/2 oz) can chicken broth
1 (20 oz) can pineapple chunks
1/4 cup vinegar-(I prefer apple cider vinegar)
2 tbsp brown sugar
2 tsp soy sauce-light or low sodium
1 garlic clove-minced
1 med onion-diced
1 med bell pepper-diced
3 tbsp cornstarch
1/4 cup water


1. Brown chicken in oil in a heavy bottomed skillet.
Place in a prepared Crock Pot.
2. Combine remaining ingredients. Pour over chicken.
3. Cover; cook on low 6-8 hours.
4. Serve over hot Jasmine rice (OR whatever rice you have on hand).
