Southwestern Chicken Casserole

1 (14.5 oz) can stewed tomatoes or 1 can Rotel
1 1/2 cups diced cooked chicken
1 can mexi corn-drained
1/2 med onion-minced/grated
1 clove garlic-minced
1 (8 1/2 oz) corn muffin mix
1/2 cup sour cream
1 tsp chili powder
2 eggs
1 cup shredded cheddar cheese

1. In a large bowl, combine all ingredients EXCEPT cheese; Mix well.

2. Spread into a 8x8 prepared baking dish.
3. Sprinkle cheese on top.
4. Bake at 400 for 35 minutes or until toothpick in center comes out clean.

*Note*
Some options are to add cilantro, cumin, diced jalapenos, different cheeses, or adobo seasoning...whatever flavor your palate is in the mood for.
