Grilled Baked Potatoes

Makes: 4 servings



4 medium baking potatoes, scrubbed

1 Tbsp. oil

1 tsp. salt

1/2 cup Sour Cream

1/2 cup Shredded Cheddar Cheese

1/4 cup sliced green onions

1/4 cup Real Bacon Bits



PREHEAT grill to medium-high heat. Pierce potatoes with fork or small

sharp knife. Rub with oil; sprinkle with salt.

PLACE potatoes on microwaveable plate. Microwave on HIGH 8 min. or

until tender, turning after 4 min. Place potatoes on greased grate of

grill.

COOK 12 to 15 min. or until potatoes are crisp and browned, turning

occasionally. Split potatoes. Serve topped with remaining

ingredients.



Microwaved potatoes can also be wrapped individually in foil. Grill

12 to 15 min. or until potatoes are tender, turning occasionally.

Potatoes will be less crispy than when grilled without the foil.



Substitute

Prepare as directed, using Reduced Fat or Light Sour Cream and 2%

Milk Shredded Reduced Fat Cheddar Cheese.

Zesty Grilled Veggies



Prep Time: 10 min

Total Time: 20 min

Makes: 8 servings



4 medium zucchini, cut diagonally into 1/2-inch-thick slices

3 each: red and yellow peppers, cut into 1/2-inch-wide strips

1/4 cup Zesty Italian Dressing

1/4 cup 100% Grated Parmesan Cheese



PREHEAT grill to medium heat. Place vegetables in grill basket.

GRILL 10 min. or until crisp-tender, turning occasionally. Place in

large bowl.

ADD dressing; toss to coat. Sprinkle with cheese.



Don't have a grill basket? Cover grill grate with large sheet of

heavy-duty foil before preheating as directed. Spread vegetables onto

foil. Grill as directed, stirring occasionally.



How to Buy Peppers

Look for peppers with very bright colors and a firm thick flesh.

Refrigerate unwashed peppers in a plastic bag for up to 2 weeks.

Easy "Baked" Tomatoes

4 tomatoes, halved crosswise

1/4 cup Balsamic Vinaigrette Dressing

1/4 cup 100% Grated Parmesan Cheese



PREHEAT grill to medium heat. Place tomatoes, cut-sides up, in

disposable foil pan. Drizzle with dressing; sprinkle with cheese.

PLACE pan on grill; close lid.

GRILL 15 min. or until tomatoes are soft and cheese begins to turn

golden.



Substitute

For a flavor twist, use KRAFT Sun-Dried Tomato Vinaigrette Dressing.



Jazz It Up

Sprinkle with 1 Tbsp. chopped fresh basil or parsley.

Cheesy Miracle Asparagus



Prep Time: 10 min

Total Time: 16 min

Makes: 4 servings



1 lb. asparagus spears (about 16 spears), trimmed

1/3 cup water

1/4 cup MIRACLE WHIP Dressing

1/4 cup milk

1/2 cup Shredded Cheddar Cheese



PLACE asparagus and water in 2-qt. microwaveable casserole dish;

cover. Microwave on HIGH 5 to 6 min. or until asparagus is crisp-

tender; drain. Set aside.

COMBINE remaining ingredients in microwaveable bowl. Microwave on

HIGH 2 min. or until cheese is melted and mixture is well blended,

stirring after each minute.

SERVE over the asparagus.



Substitute

Try steamed green beans or steamed broccoli instead of the asparagus.
