The Garbage Plate (Burger Version)
1 servings 1 garbage plate 1½ hours 30 min prep
1-1 1/2 cup cooked macaroni
1/4 cup mayonnaise
2 tablespoons diced celery
1 tablespoon chopped carrots
1/4 teaspoon salt
1/4 teaspoon pepper
1 large potato, baked and cubed
1 tablespoon butter
2 hamburger patties
2 slices cheese
hot chili sauce (OR SPECIAL SAUCE)
3 slices Italian bread
chopped onions (optional)
refried beans (optional)
1 medium onion, chopped
1 garlic clove, minced
1 tablespoon oil
1 lb triple- ground beef
1 cup water
12 ounces tomato paste
1/2 tablespoon brown sugar
1 teaspoon ground black pepper
3/4 teaspoon cayenne pepper
1 teaspoon chili powder
1 1/2 teaspoons paprika
1/2 teaspoon ground cumin
1/2 teaspoon allspice
1/4 teaspoon cinnamon
1/2 teaspoon powdered cloves
TO MAKE SPECIAL SAUCE:.
In large skillet fry chopped onion and garlic in oil until soft. Add
meat, stirring constantly with fork to keep its texture fine.
Once meat is cooked add water and tomato paste, cook for 10 minutes.
Then add sugar and spices. Cook 30 minutes, adding water if needed.
Mix together the noodles, mayo, celery, seasoning, and carrots and
place into a large square foam container (or plate, but not as

1 cup shredded red cabbage
2 cups grated carrots
3 cups chopped celery
1/3 cup chopped dates
1/3 cup chopped dried pineapple
2/3 cup lemon yogurt or low-fat vanilla yogurt
3 tablespoons fat-free sweet and sour dressing
1/2 cup dry roasted salted peanuts, chopped
In a large bowl.
combine the cabbage, carrots, celery, dates and pineapple.
Mix in the yogurt and vinegar dressing.
Before serving, mix in the salted peanuts.

Disguised as cupcakes of course
12 cupcakes 25 min 10 min prep
1 lb lean ground beef
1/2 cup seasoned bread crumbs
1 cup grated monterey jack cheese
3 tablespoons ketchup
1/2 teaspoon celery salt
1/4 teaspoon pepper
3 cups mashed potatoes, prepared
Preheat oven to 375 degrees.
Line 12 muffin tin cups with foil bake cups.
In a large bowl, mix together all of the meat loaf ingredients until
well combined. Divide the mixture evenly among the lined cups (the
liners should be about three quarters full).
Place the filled muffin tins on a cookie sheet and bake the cupcakes
for about 15 minutes or until cooked through.
Divide the mashed potatoes among three small bowls and stir a few
drops of food coloring into each batch to create blue, yellow, and
pink pastel frostings.
Spread a generous dollop on each cupcake.

1 (10 3/4 ounce) can cream of potato soup
1 3/4 cups milk
1 stalk celery, chopped fine
1 tablespoon minced garlic
2 green onions, chopped fine
1/2 cup frozen peas
1/2 cup frozen corn
2 tablespoons Worcestershire sauce
1/4 teaspoon black pepper
1/4 teaspoon onion powder
1 lb egg noodles, uncooked
1/2 cup warm water
3 tablespoons grated parmesan cheese, cheese.
Brown ground beef, along with garlic, celery and green onions.
Add cream of potato soup and milk and bring just to a boil.

Homemade Root Beer
For some extremely peculiar reason, there is no root beer available
where I live, but there is McCormick's root beer concentrate. I
scoured the world to find a recipe and here it is. It's not exactly
A&W, but as close as you can get to the real thing, if you can't get
the real thing.

3/4 cup sugar
3/4 cup hot water
1 quart cold seltzer water
1/2 teaspoon root beer concentrate (McCormick is what I use)
1/8 teaspoon root beer concentrate (yes, more of this stuff)
Dissolve the sugar in the hot water.
Add the 1/2 and the 1/8 teaspoon of root beer concentrate and let it

Copycat KIT KAT Bars
I got this recipe from a magazine and they taste similiar to Kit
Kats, but even better. Don't let the crackers scare you off...these
really taste like candy bars!
48 pieces 20 min 15 min prep
8 ounces of waverly crackers, divided
1 cup butter
1/2 cup milk
2 cups graham cracker crumbs
1 cup packed brown sugar
2/3 creamy peanut butter
1/2 cup milk chocolate chips
1/2 cup butterscotch chips
Place about 25 crackers in the bottom of a 9 x 13" baking dish.
In a medium saucepan, melt the butter and add the milk, crumbs and
sugar and bring to a boil.
Boil for 5 minutes, stirring constantly.
Pour half of heated mixture over crackers, quickly and carefully
spreading to cover.
Place about 25 more crackers on top and spread with remaining heated
Top with remaining crackers.
Melt the peanut butter and chips together either in a small saucepan
or in the microwave.
Spread carefully over crackers.
Chill at least 1 hour or until firm.
Cut into small squares.
