Spicy Mac & Cheese with Chicken
This is a great make-ahead main dish, or cooks up quickly ~ I've made this many times after work...
2 pounds of dried pasta (any type desired)
1/2 to 1 pound boneless, skinless chicken
2 jars alfredo or cheddar cheese sauce (available often as B1G1)
2 TBSP salt-free or bbq spice, your favorite
Optional~ shredded cheese or grated parmesan
Season chicken with spices and saute until no longer pink inside. While chicken is cooking, boil pasta to desired taste~ 12 minutes al dente or longer for thicker pasta.Drain.
Chop cooked chicken and mix with drained pasta and jars of sauce. Add more spice and cheese if desired.
Makes 10-12 servings, though not that much when my 13 year old son is eating,lol!
