    Default What's For Dinner? January 1-7

    Sunday -- Italian roast pork vegetables

    Monday -- Steak with chickpea, pomegranate and arugula salad

    Tuesday -- Broccoli and cheddar cheese soup

    Wednesday -- Pecan-crusted catfish, roasted sweet potatoes, and sauteed kale

    Thursday -- Smoked turkey, brie and marmalade baguette

    Friday -- Mexican tortilla lasagna with romaine and red onion salad

    Saturday -- Pork with lentils

    Ok, you've told us what's FOR dinner, but what you really need to tell us is WHAT TIME is dinner...
    That kinda menu could make one scream "road trip"!

    ...giggle...with my schedule, dinner is later than I would like it to be -- 7:30-8PM. If you can hold off the hunger pangs...come on to NC! I always have enough and if nobody shows, I just portion it up in containers to have for lunch during the week or freeze it for future meals!

    Since it is Monday I will start with Tuesday-
    Tuesday- Beef Stew with homemade bread
    Wednesday- Roasted Chicken, spinach, rice pilaf (homemade of course)
    Thursday- Chicken pie (using left over roasted chicken), biscuits, and salad

    Friday- Homemade pizza
    Saturday- Meatloaf, mashed potatoes, corn, homemade bread

    Oh my, I agree...this menu looks fabulous! Especially the homemade bread...

    Mos-Not sure of the driving time from Alabama to NC, but it sounds as if it may be worth it.
