    A couple of days went off track with my menu this week, so we'll be having them this coming week.

    Menu for 1/1/12 - 1/7/12
    Sunday
    New Year's Day Southern Traditional meal
    Hog jowl
    black eyed peas
    turnip greens
    sliced pineapple

    Monday
    chili
    cornbread
    fresh pineapple parfaits

    Tuesday
    chicken tetrazzini
    salad
    garlic bread
    grilled pineapple

    Wednesday
    chili mac
    slaw
    steamed broccoli
    cheese garlic drop biscuits
    peach cobbler

    Thursday
    Spaghetti
    salad
    garlic parm french bread
    l/o peach cobbler

    Friday
    hamburger steaks with gravy
    myo flavored noodle mix

    Have you ever tried making baked spaghetti? It's the perfect way to change up leftover spaghetti and make it a whole new meal! LOL!
    By the way, it is a very good looking menu;-D

    MrsPaws, how do you cook "Hog Jowl"? I actually saw whole hogs heads at the store this week - something that I've never seen for sale in the cold cold north!

    I don't think I've had baked spaghetti...but sounds interesting. If you would, would you post your recipe? Would love to try it... You've got such great recipes posted...I'm sure this one would be cool also.

    As far as how I prepare hog jowl...I fry or bake it just like bacon. It tastes like a thick bacon, only better. That being said, I've never seen a whole pigs head...separate from it's body that is...wouldn't know what to do with that one...

    Baked Spaghetti
    Mix all the pasta and sauce together with a cup of mozarella and spread in a greased baking pan -- whatever size necessary for the amount you have. Top with greated Parmesan, cover, and bake at 350F 30-40 minutes until heated through. Remove cover (or foil) and broil for a few minutes until Parmesan is golden. Serve in squares like you would lasagna. As easy as it gets;-D
