Pineapple Fruit Salsa



Ingredients:

2 (15-ounce) cans crushed pineapple in lite syrup

2 (14.5-ounce) cans petite diced tomatoes or 4 cups diced fresh

tomatoes (about 4 pounds)

1/2 cup vinegar, 5% acidity

1 package Ball Simple Creations Fruit Salsa Mix

Instructions:

Combine crushed pineapple in lite syrup, diced tomatoes, vinegar and

Fruit Salsa Mix in a large saucepot. Stir and bring to a boil over

medium-high heat. Reduce heat to low and simmer 5 minutes. Cool and

serve, cool and refrigerate up to three weeks, or cool and freeze up

to one year.



Home Canning Method:

Prepare Ball or Kerr jars and closures according to instructions

found in Canning Basics.



Combine crushed pineapple in lite syrup, diced tomatoes, vinegar and

Fruit Salsa Mix in a large saucepot. Stir and bring to a boil over

medium-high heat. Reduce heat to low and simmer 5 minutes. Carefully

ladle hot salsa into hot jars, leaving 1/4-inch headspace. Remove air

bubbles. Wipe jar rim with a clean, damp cloth. Place lid on jar with

sealing compound next to glass. Screw band down evenly and firmly

until a point of resistance is met-fingertip tight.



Process 35 minutes in a boiling-water canner.

Yield: about 3 pints or 7 cups.

Chipotle Lime Salsa Breakfast Enchilada



Ingredients

1/2 cup chorizo or sausage, casing removed

fresh corn tortillas, about 5-inch diameter

2 large eggs

1/2 tsp. red pepper flakes, optional

1/4 tsp. salt

1/8 tsp. pepper

1/4 cup prepared Ball® Simple Creations™ Chipotle Lime Salsa Mix

1/4 cup shredded Cheddar cheese

2 Ball Collection Elite Platinum 8-oz jars





Instructions

Brown sausage in a skillet over medium-high heat, stirring to

crumble. Drain. Fold corn tortillas into quarters and place one on

the bottom of each jar. Whisk together eggs, pepper flakes, salt and

pepper. Pour half the egg mixture over sausage. Top each with 2

tablespoons prepared Chipotle Lime Salsa and 2 tablespoons cheese.

Apply cap and refrigerate overnight (optional).



To serve, remove cap from jar and cover jar with waxed paper. Cook in

microwave oven on medium-high setting about 1 minute or until egg

mixture is cooked. Makes 2 servings.



Note: For added variety, try Simple Creations Fiesta Salsa and Fruit

Salsa.

Simply Layered Mexican Dip



Ingredients

1 (16-ounce) can refried beans


1 cup guacamole

1 (8-ounce) container sour cream

1 (1-ounce) package Ball 100% Natural Simple Salsa Mix

1 (4-ounce) can chopped green chilies

1 (8-ounce) package taco style cheese

1 (2.25-ounce) can sliced black olives, drained

1 tomato, chopped



Instructions

Spread refried beans into an even layer in the bottom of a 9-inch pie

pan. Top beans with a layer of guacamole. In a small mixing bowl,

combine sour cream and Simple Salsa Mix. Spread sour cream mixture on

top of guacamole. Layer remaining ingredients on top of the sour

cream mixture in the order provided. Chill for 20 minutes before

serving. Serve with tortilla or corn chips.



Yield: about 8 servings.
