    I just made this last night. Very good, and I have left overs for today. Left overs are a rare thing in our household.

    This can be made easily in the crock pot. Place chicken breasts of course bought on sale, boneless skinless for $1.69 a pound out west is our lowest price in 2013, with the taco seasoning and let it cook until chicken is ready to shred. Shred the chicken, add everything else and cut back on the cheese since it adds a lot of fat. Cheese is expensive coming out to almost $3 a pound if you catch a really good sale. I would increase the chicken for a lower fat source of protein.

    I make this often in our house. It is easy to mix up with different ingredients or even leftovers. Pinto beans and leftover taco meat are a good mix. If you have some leftover still. I put it in tomato soup (MYO), a family size can and some cheesy quesadilla's -YUM!

    I just joined busy making my menu. I start a new job Monday so quick easy frugal healthy dishes for a large family are a lifesaver!!!
