    3 tablespoons butter, melted
    1 quart peppermint ice cream, soft
    1/2 cup fudge ice cream topping

    Combine crumbs and butter. Press mixture onto bottom and part way up sides of 8" square baking pan. Freeze until firm.

    Spread ice cream over the frozen crumbs. Cover with chocolate topping. Freeze several hours or overnight.
    To serve, let stand at room temperature about 15 minutes; cut into squares.

    Which type of peppermint ice cream is the best? I really haven't seen any at the grocery stores, but I will have to look harder next time.

    Make your own, take a quart of vanilla ice cream, let it softened on the counter for 5-10 minutes, add 1/2 c. crushed peppermint candy canes, mix well.
