1 tablespoon olive oil
4 boneless chicken breast halves, without skin
salt and pepper
Creole or Cajun seasoning > MYO save $$$
2 to 3 tablespoons flour
1/2 cup chicken broth
4 medium zucchini squash, thinly sliced
4 to 6 plum tomatoes, sliced (I used vine cluster tomatoes, but to each there own)
6 ounces fresh Mozzarella cheese or slices (I used shredded because that is what I had).

In a large skillet over medium heat, heat olive oil. Sprinkle chicken with salt, pepper, and seasoning, then dust lightly with flour. Brown the chicken in the hot skillet, turning to brown both sides. Add chicken broth. Cover the skillet and simmer for 10 minutes (less if the chicken breasts are thin). Add zucchini; cover and simmer for 5 minutes. Add sliced tomatoes and sprinkle with a little salt and pepper; simmer, uncovered, for 5 to 10 minutes longer, or until chicken is cooked through. Top with cheese slices, cover, and simmer for about 1 minute longer.
