Apple Pie In A Jar

7 quarts peeled apples
4 1/2 cups sugar
1 1/4 cups cornstarch
2 tsp cinnamon
1/4 tsp nutmeg
1 tsp salt
10 cups water
3 Tbsp lemon juice
Peel & slice apples. Fill jars with apples, leaving 1-inch headspace.
Combine sugar, cornstarch, cinnamon, nutmeg, salt, & water. Cook until
thickened. Add lemon juice. Pour syrup over apples in jars leaving 1/2-inch
headspace. Seal jars in hot water for 30 minutes
