Chocolate Cake with Fudge Pudding on the Bottom

1 cups sugar divided use
1 cup flour
7 tablespoons cocoa, divided use
2 teaspoons baking
teaspoon salt
cup milk
1/3 cup unsalted butter, melted
1 teaspoons vanilla extract
cup packed light brown sugar
1 cups hot water

1. Preheat oven to 350 degrees. Stir together cup of the sugar, the flour, 3 tablespoons of the cocoa, the baking powder and salt. Stir in milk, butter and vanilla. Pour into an ungreased 8 inch square baking dish.

2. In a separate bowl, mix remaining cup sugar, the brown sugar and remaining 4 tablespoons cocoa. Sprinkle evenly over batter. Pour hot water over the top and do not stir.

3. Bake 35 to 40 minutes or until the center is set. (If desired, serve topped with vanilla ice cream.)
