MYO Watermelon Salsa
Adapted from "Cooking Fearlessly" by Jeff Blank, Jay Moore with Deborah Harter, Fearless Press.
2 cups seeded and finely diced watermelon
1 Granny Smith apple, peeled and finely diced
1 red onion, julienned
2 garlic cloves, minced
1 mango, peeled, pitted and diced
2 jalapeno chilies, seeded and finely diced
1 bunch cilantro, leaves only, chopped
2 tablespoons sugar
Juice of 2 limes
Splash of rice wine vinegar
In large bowl, combine watermelon, apple, onion, garlic, mango, chilies, cilantro, sugar, salt and pepper to taste, lime juice and vinegar. Cover and chill 1 to 2 hours.
Makes 5 cups or 10 servings.
Per serving: 56 calories; trace g fat (0 g saturated fat; 0 percent calories from fat); 13.5 g carbohydrates; 0 mg cholesterol; 34 mg sodium; 1 g protein; 1.5 g fiber.
