pot roast help

I have about 1/2 of a pot roast left over from dinner. Any ideas of how to "encore" it other than beef stew? TIA, ~Katrina~ "There are two lasting things a mother can give her child...one is roots , the other is wings."

    I have about 1/2 of a pot roast left over from dinner. Any ideas of how to

    My husband is a hater of leftovers so I have become the queen of
    reinventing! lol. I would shred the pot roast and make chili out of
    it by adding beans and chili seasoning and a can of tomatoes. Make
    ait a full meal by adding a salad and some rice. THis makes some
    really good chili like you would have at a resturant! Yum. I am
    thinking of making some up tonight now that you've got it in my head!

    Alternately, you can make a cold dish out of it, either Italian canalesa or
    salpicon. For canalesa, shred it finely and mix with chopped
    celery, parsley, garlic and olive oil. For salpicon, shred finely, mix with
    shredded radish, lettuce, parsley, and lemon juice and serve
    with tortillas, beans, and rice.

    Just a thought, albeit better suited to summer...
