As a dialysis patient we are restricted to eating potatoe, the way we allowed to is to leach them in water for at least 4 hours, and then continue whatever process you want weith the potatoes. I have cheated and bought canned potatoes and just rinse them really well and continue the cooking process. My favorite is to buy the canned sliced potatoes and fry them with onions, garlic and butter, since they are pre-cooked it works very quickly.
