OK I could use some help and hope that someone can help here.

Last night I got a large box of cucmbers from hubby's grandma and now I
don't really know what all to do with them. Typically if I had the room
and jars to do it I would just make pickles and relish but I don't have
the room or jars.

I am looking for recipes that are fairly easy since I don't feel good
right now and don't want to be doing a whole lot but need to do
something with them before they go bad like they did last year.
