2 lbs boneless country-cut pork ribs, trimmed of fat
1 28oz can crushed tomatoes
2 stalks celery, sliced
1 green pepper, chopped
1 medium onion, chopped
2 tbsp tapioca, quick cooking
1 1/2 tsp sugar
1 1/2 tsp fresh basil OR 1/2 tsp dried basil
1/2 tsp salt
1/4 tsp pepper
1/4 tsp hot pepper sauce (optional)

1 clove garlic, minced

Place ribs in slow cooker. Combine all remaining ingredients except basil in a large bowl, and mix well, pour over ribs. Cover and cook on high for 4-5 hours or low for 8-10 hours.
Remove ribs, skim any fat from sauce. Add basil to sauce, stir, then serve sauce over ribs. Serve.
