4 cups sliced zucchini
1/4 cup butter or margarine
2 tbsp lemon pepper
Juice from one squeezed lemon In skillet over medium heat, saute zucchini in butter or margarine until tender, about 10-15 minutes, stirring frequently. Add lemon juice, stir and serve over steamed brown rice.
If you have leftovers, you can add veggie broth a few leftover veggies and have a delicious soup.
