Scalloped Potatoes for 1
1 small potato -- peeled and sliced
1/3 cup milk
1 small garlic clove -- minced
1/4 teaspoon salt -- optional
1/8 teaspoon pepper
1/2 teaspoon butter or margarine
1 tablespoon shredded cheddar cheese -- (1 to 2)
In a small saucepan, combine potato slices, milk, garlic, salt if desired and pepper; bring to a boil.
Pour into a buttered 1O-oz. custard cup. Sprinkle with cheese.
Bake, uncovered, at 375 for 35 minutes or until potatoes are tender.

It's been hard for me to switch from cooking and grocery shopping for two people to just one person.
Mom went into a nursing home this past winter after she had a heart attack and a stroke.
Needless to say my life changed in a hurry.
