In the interest of frugal cooking: make use of your crock pots

Not exactly all day, but.....................
Angie's Cajun Style White Beans & Rice
a.. 1 lb. great northern white beans
b.. 3-4 bacon strips (I use imitation vegetarian bacon bits)
c.. 1/4 cup each chopped onions, bell peppers, and celery
d.. salt and pepper
e.. 1/4 cup cooking oil
Let beans soak overnight in the refrigerator. Put all ingredients in slow
cooker/Crock Pot and cook on low about 4 hours. If the beans are cooked but
the "gravy" is too thin, you may have to boil the beans on the stove until it
is thicker. Serve over rice.
And just a note: I've seen some recipes say don't boil the beans too hard so
the beans won't burst. I say let them burst!! This is what makes it good!!
