Hi, here is a recipe for Crustless Quiche that I make often, and love it.
I bake it in a 9 inch pie plate and cut into 6 pieces, but you could
probably bake it in individual dishes if desired.

12 egg whites
1 cup skim milk
1 pkg Knorr Vegetable soup mix
1 (10 oz) package frozen spinach, thawed
1/4 cup flour
2 oz. Low fat Swiss Cheese, shredded
2 Tbsp Hormel real bacon bits

Thaw spinach and squeeze out the water. Mix together all ingredients with
a wire whisk. Spray the pie plate with olive oil. Pour the ingredients
into pie plate. Bake in a preheated 350 degree oven for 1 hour and 15
minutes or until center is done. This is a very satisfying meal that lasts
me a long time. It warms up great in the microwave.
