California-Style Turkey Patties with Corn and Tomato Relish

1 1/2 pounds ground turkey breast
1 medium onion -- chopped (1/2 cup)
1 cup soft bread crumbs -- (about 1 1/2 slices bread)
1/2 teaspoon salt
1/4 teaspoon pepper
1/3 cup chicken broth
Corn and Tomato Relish (see below)

CORN AND TOMATO RELISH
1 (11-ounce) can whole kernel corn with red and green
peppers -- drained
2 medium stalks celery -- sliced (1 cup)
12 cherry tomatoes -- cut into fourths
2 tablespoons lemon juice

Mix turkey, onion, bread crumbs, salt, pepper and broth. Shape mixture into
6 patties, each about 1/2 inch thick.

Set oven control to broil. Spray broiler pan rack with cooking spray. Place
patties on rack in broiler pan. Broil with tops 4 inches from heat about 12
minutes, turning once, until no longer pink in center. Serve patties with
Corn and Tomato Relish.

CORN AND TOMATO RELISH:
Mix all ingredients.
