Zucchini Tomato Custard Pie

1/3 cup grated Parmesan cheese
2 cups chopped zucchini
1 cup chopped tomato
1/2 cup chopped onion
1 cup Sammi's Best Soy, liquid
3/4 cup biscuit mix
3 eggs
1/2 tsp salt
1/4 tsp pepper

Preheat oven to 375 degrees. Grease a 10-inch pie pan, and press biscuit mix
(or use prepared uncooked refrigerator biscuits) to cover the bottom of the
pie pan. Sprinkle biscuit mix with Parmesan cheese. Add zucchini, tomato and
onion. Beat remaining ingredients until smooth. Pour over vegetables. Bake
for 40-45 minutes or until a knife inserted comes out clean.
