Pan Dulce

1 pkg yeast
3/4 cup warm water
3-1/2 cups flour
3/4 cups sugar
1/2 tsp salt
1/2 tsp butter
2 eggs, slightly beaten

Dissolve yeast in the water. Sift flour, sugar and salt together in a
bowl. Add the yeast mixture, butter and eggs, beat until smooth.
Place dough in a greased bowl, cover and let rise in a warm place
until doubled in size, about 1-1/2 hours. Punch down and turn our onto
a lightly floured board and knead until smooth and elastic. Pinch off
pieces of dough and shape into smooth rounded balls about 1-1/4
inches in diameter. Place balls of dough on a greased baking sheet,
about 2 inches apart. With the palm of your hand, press each ball
down, flattening it slightly.

Cinnamon - Flavored Topping

1 cup sugar
1 cup flour
1/2 cup butter, melted

1 egg, slightly beaten
1 tsp cinnamon
Dash of salt

Blend all ingredients together and mix well. Gently spread about 1
tablespoon of topping on each bun, then let rise until doubled in size,
about 30 minutes. Bake at 400F for 10 minutes or until lightly browned.
Serve warm. Yields 18 rolls
