Turkey Skillet Dinner
2 tbs oil
1 onion, coarsely chopped
1 clove garlic, minced
4 potatoes, sliced in rounds
16 oz can diced tomates with juice or two fresh tomatoes, chopped
1 cup water (2 if using fresh tomatoes)
2 cups turkey, cubed or shredded
salt and pepper to taste
In a large skillet, heat oil and add onion and garlic. Saute until onion is translucent. Add potatoes and cook over medium heat, stirring occasionally, for 15 minutes. Pour canned tomatoes into skillet, stir to mix and add turkey, water, and seasonings. You don't really need any other seasoning because the turkey was marinated and has LOADS of flavor! Continue cooking until everything is thoroughly heated and fluid is reduced, about 15 minutes. You can thicken with corn starch or flour and water mixture if desired, but it really isn't necessary. Serve it up!
