    Shrimp and Chorizo -- Cook sliced chorizo in a skillet with a little oil for a few minutes. Add shrimp and a tsp of minced garlic. Cook until opaque. Serve with chopped parsley -- yellow rice, and avocado salad

    Roast Chicken (save some for later) -- Rub chicken with a mixture of lemon jiuce, olive oil, minced garlic, salt, pepper and herbs before roasting -- baked sweet potatoes, and steamed kale

    Cheese ravioli with marinara sauce and green beans with toasted almonds -- Toast sliced almonds in skillet with a little butter, stirring often, until fragrant. Toss with green beans

    Chicken fajitas -- Saute sliced peppers and red onions until tender. Heat with shredded chicken (from two days ago). Serve with warm flour tortillas, sour cream and salsa -- and corn on the cob

    Turky cutlets with cranberry sauce, stovetop stuffing, and brussels sprouts -- Cook diced bacon and onion in a skillet. Drain some of the drippings. Toss with Brussels sprouts and a little butter


    Cuban pork chops -- Marinate pork chops in 1/4 cup olive oil, 2 tbs lime juice, 1 tsp minced garlic, 1/2 tsp cumin and chopped cilantro -- black beans and rice, and tomato and cucumber salad

    Antipasto salad -- Toss artichoke hearts, roasted red peppers, pepperoncini, olives, sliced salami and little mozzarella balls with greens and Italian vinaigrette -- and Italian bread
