    • Almost Emeril`s Southwest Seasoning

      Almost Emeril's Southwest Seasoning Mix


      2 TB chili powder
      2 teas. ground cumin
      2 TB paprika
      1 tsp. black pepper
      1 TB ground coriander
      1 tsp. cayenne pepper
      1 tsp crushed red pepper
      1 TB salt
      1 TB dried oregano


      Combine all ingredients and seal in ziploc or vacuum seal bag (or jar).
      Measure all into a ziploc bag, seal & shake to combine.
      Use on fish, meat before baking, braising or grilling

      Re: Do I really need parchment paper?

      I know this is late but... I have used greased brown paper. A "granny" trick I was taught a long time ago. Then I don't have to worry about getting the parchment clean enough to store.

      Have you thought about mixing the ground beef with ground turkey?
      We purchase a 12oz chub of frozen ground turkey for about $1.50 and can get fresh ground on mark down for about $2 per pound. I mix...
